I love to eat bread… like, a lot of bread. Not only do I eat an inhuman amount of bread but almost any kind of carbs in my sight, it got to a point where my mom would yell at me [mama here : oh, kiddo, you haven't seen me yell. you have no idea.] because I had eaten so many bagels [mama here: like three bagels a day. wtf.]. I thought back to earlier in the year and remembered a recipe for chia seed pudding, it’s an awesome snack and super easy to make.
I told my mom about it and she agreed to go to the store and grab the ingredients so I could finally have a healthy snack that I enjoy. Being the teenager that I am I was extremely impatient to wait the two days until she went to the store. [mama here: yeah, what's new.]
- 1 cup coconut milk
- ¼ cup chia seeds
- ½ teaspoon vanilla extract
- ⅛ cup maple syrup (or sub any sweetener)
- ¼ teaspoon cinnamon (optional)
- Any additional toppings (blueberries, strawberries, raspberries, etc)
